Tomato Pie!

 9 inches pie shell (see pie crust recipe for homemade version) I love the organic crust frozen ones. You can get gluten free as well
½ cup red onion (or chopped yellow, about 1/3 onion, diced)
4 tomatoes (cut in half horizontally, squeezed to remove excess juice, roughly chopped, to yield approximately 3 cups, 700 ml, chopped tomatoes) Save the juice for your smoothie or your morning drink!
½ teaspoon Himalayan salt or regular to taste
¼ cup basil (sliced, about 8 large leaves)
2 cups cheese (grated, combination of sharp cheddar and Monterey Jack, or Gruyere or Mozzarella) You can use vegan options and add some wheat germ also.
½ cup mayonnaise ( veganaise works fine )
your choice Coriander ( this is where your cilantro has gone to seed-throw out the woody parts and keep the flowering spice parts. Use to taste for a peppery sensation. If you are not a fan of coriander, use hot sauce or a touch of chili powder to spice it a little.
add black pepper (freshly ground)
